nerds math enthusiasts everywhere celebrated the annual holiday of Pi Day! Pi Day is celebrated every year on March 14th (3/14) since 3.14 is the common approximation of π. In honor of this year’s Pi Day, I decided to make pie pops and bring them in to work. Cause who doesn’t love mini pie on a stick?? 🙂
First, assemble your ingredients:
You are going to need:
- One recipe of pie dough (for a shortcut, you can buy boxed mix or pre-made pie dough)
- Pie filling (canned pie filling works well for this because it’s pre-cooked, but feel free to make your own!)
- Cutting board
- Sharp knife
- Rolling pin
- Round cookie cutters (I use 2 5/8-in and 2 1/4-in cutters)
- Lollipop sticks (You can get these at any craft store in the baking section. 50 sticks usually cost around $2 at Hobby Lobby, etc.)
- Baking sheet lined with parchment paper (not shown)
- Fork (not shown)
- Dusting sugar (not shown)
- Oven, preheated to 375°
Begin by preparing your pie filling. If using large fruit, like cherries or apples, chop on a cutting board in to much smaller pieces.
Next, roll out your pie dough. Dust a clean surface with flour, and roll pie dough very thin.
Using the 2 cookie cutters, cut out an equal number of larger and smaller circles. Save the excess dough because you can roll it back out and cut more circles.
Place the larger circle in the palm of your hand. Shape the circle in to a small bowl.
Add a spoonful of filling in the center of the dough, making sure to keep the edges clear. Put a lollipop stick to the center of the pie.
Place a small circle on top of the filling, in the center of the pop. Crimp the edges closed with your fingers, while keeping the filling in the middle of the pop. (It may take a few tries to get the hang of this step! Don’t fret because they will still taste good if they are a little messy…)
Carefully flip the pop over and place it small-side down on the baking sheet. Using a fork, seal the edges of the pie pop. Carefully seal around the lollipop stick. Using a fork, poke a set of small holes in the top of the pie to let steam escape when baking.
Repeat with the remaining pie pops. Bake in 375° preheated oven for 15-20 min or until lightly browned.
Remove pops from the oven and let cool slightly. Sprinkle with sugar.
Remove to a wire rack and let cool.
