As I stated in Tuesday’s post, I had a lot of fun this week celebrating “National Grilled Cheese Sandwich Day”! I love the opportunity to create something that you wouldn’t normally expect for dessert, especially something that cooks up quickly and easily (and without needing to turn on the oven during a heat wave!)… So, next time you’re searching for a fast and yummy dessert recipe, how about an Apple and Goat Cheese Grilled Cheese?! 🙂
First, assemble your ingredients.
You are going to need:
- Sliced bread (I used honey wheat because I don’t like white bread, but I wanted the extra sweetness of the honey.)
- Goat cheese (You should be able to find a few varieties of goat cheese in the specialty cheese section of your local grocery store, usually in the deli section.)
- Butter, at room temperature
- Butter knife
- Sharp knife
- Cutting board
- Skillet or saute pan
- Rubber spatula
Begin by buttering two slices of bread. (You want to make sure your butter is at room temperature for this step so that you don’t tear the bread.)
Using a sharp knife, cut about 2 ounces of goat cheese from the package. Crumble the cheese on the unbuttered side of a slice of bread. (Goat cheese does not spread very well, so do your best to distribute the crumbles.)
On a cutting board, thinly slice a quarter of the apple.
Place a few slices of apple on top of the cheese.
On the unbuttered side of the other slice of bread, spread approximately 1 tablespoon of honey.
Preheat your skillet or saute pan over medium-low heat. After a few minutes, place the slice of bread with the cheese buttered side down. Place the honey covered slice of bread on top, buttered side up.
Once both sides of the grilled cheese are lightly browned and the cheese has melted, remove from the heat and place on a cutting board.
Slice grilled cheese in half along the diagonal. Serve warm, drizzled with more honey if desired. Enjoy! 😀
