Bunny Cupcakes

This week, I’ve been on a bit of a decorating kick. And with Spring starting (even though it doesn’t feel like it in DC!) and Easter coming up, I decided to make some Bunny Cupcakes. The design is slightly based on my Beaver Cupcakes, as my original intent was to make them very similar. But they came out looking more creepy than cute, so I went back to the drawing board!

And I think these guys came out absolutely adorable! I even used the opportunity to test out a new vanilla cake recipe. I had a lot of fun putting them together, and the boyfriend took great enjoyment in eating their cute little faces.

Bunny Cupcakes

You are going to need:

  • White decorating sugar (I use Wilton’s White Sparkling Sugar.)
  • Red (or pink) decorating sugar
  • Chocolate sprinkles
  • Marshmallows
  • Red heart candies or large red or pink sprinkles
  • Brown mini M&Ms or mini chocolate chips
  • White gum

You are also going to need:

  • Fully cooled cupcakes
  • White/vanilla icing
  • Black food coloring pen (I use one from this set.)
  • Food-safe scissors

Begin by icing your cupcake. Fill a decorating bag with white icing (see the directions is my Cupcake Icing: Tips & Tricks post), and pipe about 2 tablespoons of icing on to the top of the cupcake. Invert the cupcake, and press it in to the white decorating sugar. Apply a small amount of pressure to spread the icing across the top of the cupcake. Set aside.

Next, using your scissors, cut your bunny’s ears from a marshmallow. Flatten the marshmallow slightly, and cut a triangle from each side of the marshmallow. Discard (or eat) the rest of the marshmallow. Press the sticky side of the marshmallow in to your red decorating sugar. Set aside.

For the teeth, take the black food coloring marker and draw a line down the center of a piece of gum.

To assemble your bunny, use a small amount of icing to attach the ears to the top of your cupcake. Insert the gum at an angle the frosting. Make sure there is some frosting above the teeth. Use a dab of icing to attach a red heart candy on top of the teeth for his nose. Add two mini M&Ms for his eyes and sprinkles for his whiskers.
